Equipment

  • Large skillet or cast-iron pan
  • Spatula
  • Sharp knife or mandoline slicer
  • Cutting board
  • Butter knife
  • Small serving bowl for apple butter
  • Measuring spoons
  • Cheese grater

Ingredients

Sandwiches

  • 4 slices sturdy sourdough bread
  • 4 slices havarti cheese
  • 1/4 cup freshly shredded aged white cheddar cheese
  • 1 small Honeycrisp or Pink Lady apple paper-thin sliced
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons salted butter softened
  • Fresh cracked black pepper to taste
  • Flaky sea salt for finishing
  • Optional fresh thyme leaves

For Serving

  • 1 1/2 tablespoons apple butter warmed

Instructions

Prepare the Apples

  • Thinly slice the apple using a sharp knife or mandoline. Pat the slices lightly dry if the apples are especially juicy.

Assemble the Sandwiches

  • Spread a very thin layer of Dijon mustard onto two slices of bread. Place one slice of havarti cheese onto each bread slice, then sprinkle with a small amount of shredded aged white cheddar. Arrange the thin apple slices evenly over the cheese and season lightly with cracked black pepper. Add the second slice of havarti cheese and optional thyme leaves, then top with the remaining bread slices.

Butter the Bread

  • Spread the softened salted butter evenly onto the outer surfaces of each sandwich.

Cook the Sandwiches

  • Heat a skillet over medium-low heat. Place the sandwiches into the skillet and cook for 4–5 minutes per side until the bread is deeply golden brown and crisp and the cheese is fully melted. Press lightly with a spatula while cooking for even browning. Lower the heat if the bread browns too quickly before the cheese melts completely.

Finish and Serve

  • Allow the sandwiches to rest for 1 minute before slicing. Serve with warm apple butter on the side for dipping. Finish with flaky sea salt and additional cracked black pepper if desired.

Notes

Use High-Quality Sourdough Bread

A sturdy bakery-style sourdough works best for this Apple Butter Havarti Grilled Cheese because it crisps beautifully while supporting the creamy cheese and fresh apple slices without becoming soggy.

Thin Apple Slices Are Important

Paper-thin apple slices soften naturally from the heat of the sandwich while still adding fresh texture and tart flavor. Thick apple slices can make the sandwich bulky and prevent the cheese from melting evenly.

Havarti Cheese Melts Best Slowly

Havarti becomes creamy and smooth when cooked over medium-low heat. Cooking the sandwich too quickly can cause the bread to burn before the cheese fully melts.

Aged White Cheddar Adds Flavor Depth

The small amount of sharp aged white cheddar balances the buttery havarti and gives the grilled cheese a more complex savory flavor without overpowering the sandwich.

Apple Butter Works Best on the Side

Serving warm apple butter as a dip instead of spreading it inside the sandwich keeps the sourdough crisp and prevents excess moisture. It also lets you control the sweetness in each bite.

Honeycrisp and Pink Lady Apples Work Best

These apples provide the ideal balance of sweetness and tartness for grilled cheese sandwiches. They also stay crisp and fresh instead of turning mushy while cooking.

Don’t Skip the Black Pepper

Fresh cracked black pepper helps balance the sweetness of the apple butter and enhances the flavor of the cheese and apples.

Let the Sandwich Rest Before Slicing

Allowing the grilled cheese to rest for 1 minute after cooking helps the melted cheese settle slightly for cleaner slices and less filling spill-out.
