Notes

Use Fresh Pineapple for the Best Flavor

Fresh pineapple caramelizes beautifully and adds the signature sweet-and-savory flavor that makes these al pastor pineapple quesadillas so delicious. While canned pineapple can work in a pinch, fresh pineapple provides better texture and a brighter taste.

Choose the Right Cheese

A combination of Oaxaca cheese and Monterey Jack creates the ultimate cheese pull while keeping the filling creamy and flavorful. Oaxaca cheese adds authentic Mexican flavor, while Monterey Jack melts smoothly and evenly.

Crisp the Pork for Extra Flavor

Allow the al pastor pork to develop lightly crispy edges before assembling the quesadillas. This simple step adds texture and enhances the smoky, savory flavors that pair perfectly with the sweet pineapple.

Don't Overfill the Quesadillas

Adding too much filling can make the tortillas difficult to fold and flip. Keeping a balanced ratio of pork, pineapple, and cheese ensures every bite is flavorful while helping the quesadillas stay crisp.

Finish with Fresh Lime Juice

A squeeze of fresh lime juice just before serving brightens the rich flavors and complements the sweet pineapple. It adds a fresh, tangy finish that makes these quesadillas taste restaurant-quality.

Great for Leftovers

These al pastor pineapple quesadillas are an excellent way to use leftover al pastor pork. The filling reheats quickly, making this recipe perfect for easy lunches, weeknight dinners, or meal prep.
