Ingredients

Chicken

Garlic Bread

  • 1 large loaf Italian bread or French bread cut into sandwich-sized portions
  • ½ cup unsalted butter softened
  • 3–4 cloves garlic minced
  • 2 tbsp chopped fresh parsley
  • ÂĽ cup grated Parmesan cheese

Assembly

  • 1½ cups marinara sauce warmed
  • 1½–2 cups shredded mozzarella cheese
  • Fresh basil optional

Instructions

Bread the Chicken

  • Set up three bowls:
  • Bowl 1: flour
  • Bowl 2: beaten eggs
  • Bowl 3: breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt & pepper
  • Dredge each chicken piece in flour → egg → breadcrumb mixture, pressing to coat well.

Cook the Chicken

  • Heat a skillet with olive oil over medium heat.
  • Fry chicken 3–4 minutes per side until golden brown and cooked through (165°F).
  • Transfer to a paper towel–lined plate.

Make the Garlic Bread

  • Mix butter, garlic, parsley, and Parmesan.
  • Spread generously on the cut sides of the bread.
  • Toast in a 375°F oven for 8–10 minutes until golden and fragrant.

Assemble & Melt

  • Place fried chicken on the bottom half of each garlic bread piece.
  • Spoon marinara over the chicken.
  • Top with mozzarella and basil (if using).
  • Broil 2–3 minutes until cheese is melted and bubbly.
  • Close with the top garlic bread half.
