Taco Meat 1 pound lean ground beef 90/10 preferred 2 tablespoons taco seasoning 1/3 cup water Salad 1 large head romaine lettuce chopped and dried very well 1 1/2 cups cherry tomatoes halved 1 can 15 ounces black beans, drained and rinsed thoroughly 3/4 cup corn kernels drained well 1/3 cup diced red onion 1 avocado diced 1 cup shredded sharp cheddar cheese 1/2 cup shredded Monterey Jack cheese 5 to 6 cups lightly crushed Nacho Cheese Doritos Creamy Taco Dressing 1/4 cup Catalina dressing 1/4 cup sour cream 2 tablespoons mayonnaise 2 tablespoons chunky salsa 1 tablespoon lime juice 1 teaspoon taco seasoning 1 teaspoon hot sauce optional 1 to 2 teaspoons milk only if needed to thin dressing
Step 1: Cook the Taco Meat Heat a large skillet over medium heat.
Add the ground beef and cook for 6 to 8 minutes, breaking it apart into crumbles, until fully browned.
Drain excess grease if needed.
Add taco seasoning and water. Stir well and simmer for 2 to 3 minutes until lightly saucy and flavorful.
Transfer the meat to a plate and cool for about 10 minutes.
Step 2: Make the Dressing In a medium bowl, whisk together Catalina dressing, sour cream, mayonnaise, salsa, lime juice, taco seasoning, and hot sauce if using.
If needed, add a small splash of milk to loosen the dressing slightly.
The dressing should taste creamy, tangy, lightly savory, and only slightly sweet.
Refrigerate until ready to use.
Step 3: Assemble the Salad In a very large salad bowl, combine romaine lettuce, cherry tomatoes, black beans, corn, red onion, cheddar cheese, and Monterey Jack cheese.
Add the cooled taco meat and toss gently.
Right before serving, fold in the avocado and crushed Doritos.
