For the Cheese Sauce

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1/4 cup seafood stock
  • 3/4 cup heavy cream
  • 4 ounces cream cheese softened
  • 2 cups freshly shredded extra-sharp cheddar cheese
  • 2 cups freshly shredded smoked gouda cheese
  • 3/4 cup freshly shredded Monterey Jack cheese
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Louisiana-style hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon white pepper
  • Salt and black pepper to taste

For the Topping

  • 1 cup panko breadcrumbs
  • 2 tablespoons unsalted butter melted
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon Cajun seasoning

For Garnish

  • Remaining green onions
  • 1 tablespoon chopped fresh parsley

Instructions

  • Preheat the oven to 375°F. Lightly grease a 9x13-inch baking dish.
  • Bring a large pot of water to a boil. Add the kosher salt and cook the macaroni 2 minutes less than the package directions. Drain and set aside.
  • Melt 1 tablespoon butter in a large skillet over medium heat. Add the onion, celery, and bell pepper. Cook for 5 minutes, stirring occasionally.
  • Add the garlic and cook for 30 seconds.
  • Stir in the crawfish tails, 1 teaspoon Cajun seasoning, and half of the green onions. Cook for 2 to 3 minutes until heated through. Remove from heat.
  • In a large saucepan, melt 4 tablespoons butter over medium heat. Whisk in the flour and cook for 1 minute.
  • Slowly whisk in the milk, seafood stock, and heavy cream until smooth.
  • Cook for 4 to 5 minutes, whisking frequently, until slightly thickened.
  • Whisk in the cream cheese until completely smooth.
  • Add the Dijon mustard, hot sauce, Worcestershire sauce, smoked paprika, cayenne pepper, white pepper, and remaining teaspoon Cajun seasoning.
  • Remove from heat and gradually stir in the cheddar, smoked gouda, and Monterey Jack cheeses until melted and smooth.
  • Taste and season with salt and black pepper as needed.
  • Fold the cooked macaroni into the cheese sauce.
  • Gently stir in the crawfish mixture.
  • Transfer the mixture to the prepared baking dish.
  • In a small bowl, combine the panko breadcrumbs, melted butter, Parmesan cheese, and 1/2 teaspoon Cajun seasoning.
  • Sprinkle the topping evenly over the macaroni and cheese.
