Notes

These Thai crab lettuce cups are inspired by a classic Thai yam (seafood salad), which focuses on a clean balance of sour, salty, and lightly sweet flavors. The goal is to highlight the natural sweetness of crab while keeping the overall taste bright, fresh, and vibrant.

Flavor Balance Tips

  • The dressing should taste slightly bold on its own so that it balances properly once mixed with the crab
  • Thai flavor profiles lean more sour and salty than sweet, so keep sugar minimal
  • Always adjust seasoning after resting the mixture for the most accurate final taste

Crab Selection Matters

  • Use lump crab meat for the best texture with large, tender pieces
  • Fresh or refrigerated pasteurized crab gives the best flavor
  • If using canned crab, drain thoroughly and gently press out excess moisture

Texture Control

  • Keep all ingredients as dry as possible to prevent a watery filling
  • Add dressing gradually so the mixture stays lightly coated instead of soggy
  • The final texture should be lightly juicy but not dripping

Herb Freshness

  • Fresh herbs are essential for authentic Thai flavor
  • Add cilantro, mint, and Thai basil just before serving to keep them vibrant
  • Mix gently after adding herbs to avoid bruising

Heat Level

  • Thai bird’s eye chilies provide a clean, sharp heat
  • Start small and adjust based on your spice preference

Serving and Presentation

  • Use sturdy lettuce like butter lettuce or little gem for best structure
  • Assemble just before serving for optimal texture
  • Finish with a squeeze of fresh lime to enhance brightness

Make-Ahead Tips

  • Prepare the crab mixture ahead of time without herbs and store chilled
  • Add herbs and assemble lettuce cups right before serving
