📝 Recipe Notes
Crispiest wings: Pat the wings very dry and use baking powder (not baking soda) for maximum crispiness.
Heat level: This recipe is medium heat. Add more sriracha, chili garlic sauce, or a pinch of cayenne to turn up the spice.
Mango options: Fresh, frozen (thawed), or canned mango puree all work well. Make sure it’s unsweetened if possible.
Sauce thickness: If the sauce gets too thick, thin it with 1–2 tablespoons of water or chicken broth.
Make-ahead: The sauce can be made up to 3 days ahead and stored in the fridge. Reheat gently before tossing with wings.
Air fryer tip: Cook wings in batches to avoid overcrowding and ensure even crisping.
Glazing tip: For extra stickiness, return sauced wings to the oven for 3–5 minutes to caramelize slightly.
Serving idea: Finish with fresh lime juice right before serving to brighten the flavors.
