  • Small saucepan
  • Whisk or spoon
  • measuring cups
  • Measuring spoons
  • tall glass
  • stirring spoon

Ingredients

  • 1 cup sparkling water or club soda chilled
  • 3 tablespoons coconut cream well stirred
  • 1–2 tablespoons simple syrup to taste
  • ¼ teaspoon vanilla extract
  • Ice cubes

🍯 Simple Syrup

  • ½ cup granulated sugar
  • ½ cup water

Optional Garnishes

  • Whipped cream
  • Toasted coconut flakes
  • Maraschino cherry or lime wedge

Instructions

Make the simple syrup

  • In a small saucepan, combine ½ cup sugar and ½ cup water. Heat over medium, stirring until the sugar fully dissolves. Bring to a gentle simmer, then remove from heat and let cool completely.

Prepare the glass

  • Fill a tall glass with ice.

Mix the coconut base

  • In a small bowl or measuring cup, whisk coconut cream, 1–2 tablespoons cooled simple syrup, and vanilla extract until smooth.

Assemble the soda

  • Pour the coconut mixture over the ice.

Add carbonation

  • Slowly top with chilled sparkling water or club soda. Gently stir to combine.

Garnish and serve

  • Top with whipped cream, toasted coconut, or a cherry if desired. Serve immediately.

Notes

  • Use full-fat coconut cream: Coconut milk is too thin; coconut cream gives the soda its rich, creamy texture.
  • Stir coconut cream well: It separates in the can, so mix thoroughly before measuring.
  • Sweetness control: Start with 1 tablespoon simple syrup and add more to taste.
  • Chill everything: Cold ingredients help preserve carbonation and keep the drink refreshing.
  • Add soda last: Pour sparkling water gently to avoid overflow and loss of fizz.
  • Make ahead: Simple syrup can be made up to 2 weeks in advance and stored in the refrigerator.
  • Flavor boost: A tiny pinch of salt enhances the coconut and vanilla flavors.
  • Dairy-free: This drink is naturally dairy-free and vegan.
  • Party tip: Multiply ingredients to make a coconut cream soda bar with flavor syrups and toppings.
