Heat 1 cup water to 175°F / 80°C (hot but not boiling).
Add jasmine green tea and steep for 2 minutes only.
Strain and measure ¾ cup brewed tea. Discard excess.
Bloom the Gelatin
Pour the warm brewed tea into a saucepan.
Sprinkle gelatin evenly over the surface.
Let sit 5 minutes until fully bloomed.
Dissolve and Sweeten
