Ingredients

For the Pistachio Kataifi Filling

  • 1½ cups kataifi pastry finely shredded
  • ⅔ cup pistachio cream about 170–180g
  • 1 tablespoon tahini
  • ¼ teaspoon fine sea salt

For the Cookie Dough

  • 1 cup unsalted butter
  • 1 cup dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon whole milk
  • 3¼ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • ½ teaspoon espresso powder
  • 4 ounces milk chocolate chunks
  • 4 ounces semisweet chocolate chunks

For the Topping

  • 4 ounces chocolate melted
  • 2 tablespoons chopped pistachios
  • Toasted kataifi strands
  • Flaky sea salt

Instructions

Toast the Kataifi

  • Preheat your oven to 350°F (175°C). Spread the kataifi pastry onto a baking sheet in an even layer. Bake for 8–10 minutes, stirring once halfway through, until the strands are golden brown and crisp. Set aside to cool completely.

Make the Filling

  • In a medium bowl, combine the toasted kataifi, pistachio cream, tahini, and salt. Stir until the kataifi is evenly coated but still retains its texture.
  • Divide the mixture into 12 portions and gently press each into a small disc. Transfer to a parchment-lined plate or tray and freeze for 45 minutes.

Brown the Butter

  • Place the butter in a medium saucepan over medium heat. Cook, stirring occasionally, until the butter turns golden brown and develops a nutty aroma, about 5–7 minutes.
  • Pour the browned butter into a large mixing bowl and allow it to cool for 15 minutes.

Prepare the Dough

  • In a separate bowl, whisk together the flour, cornstarch, baking soda, salt, and espresso powder.
  • Add the brown sugar and granulated sugar to the cooled browned butter and mix until smooth.
  • Beat in the eggs one at a time. Stir in the vanilla extract and milk.
  • Add the dry ingredients and mix just until no dry streaks remain. Fold in the milk chocolate and semisweet chocolate chunks.
  • Cover the bowl and refrigerate the dough for 1 hour.

Assemble the Cookies

  • Divide the chilled dough into 12 equal portions, approximately 100 grams each.
  • Flatten each portion into a thick round. Place one frozen pistachio filling disc in the center and carefully wrap the dough around it, sealing all seams completely.
  • Arrange the stuffed dough balls on parchment-lined baking sheets and chill for another 15 minutes.

Bake

  • Bake at 350°F (175°C) for 13–15 minutes, or until the edges are lightly golden and the centers still look slightly soft.
  • Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.

Decorate

  • Drizzle the cookies with melted chocolate. Sprinkle with chopped pistachios, extra toasted kataifi, and a pinch of flaky sea salt.
  • Allow the chocolate to set before serving.

Notes

Use High-Quality Pistachio Cream

The pistachio cream is one of the star ingredients in these Dubai Chocolate Cookies, so quality matters. Choose a pistachio cream made primarily from pistachios for the richest flavor and smoothest texture. Premium pistachio cream creates a filling that tastes similar to the viral Dubai chocolate bar and delivers a more authentic result.

Toast the Kataifi Thoroughly

Properly toasted kataifi is essential for achieving the signature crunch that makes Dubai chocolate desserts so popular. Bake the kataifi until it is deeply golden and crisp before combining it with the pistachio cream. Under-toasted kataifi can become soft and lose its distinctive texture.

Freeze the Filling Before Assembling

Freezing the pistachio kataifi filling helps it hold its shape during assembly and baking. This simple step makes the cookies easier to stuff and helps maintain a distinct, crunchy center once baked.

Chill the Cookie Dough

Chilling the dough is key to thick, bakery-style cookies. Cold dough spreads less in the oven, creating chewy centers and crisp edges while helping keep the pistachio filling securely enclosed.

Choose the Right Chocolate

A combination of milk chocolate and semisweet chocolate creates the perfect balance of sweetness and richness. Milk chocolate mimics the flavor profile of traditional Dubai chocolate, while semisweet chocolate prevents the cookies from becoming overly sweet.

Don't Overbake

For the best texture, remove the cookies from the oven when the edges are lightly golden and the centers still look slightly soft. The cookies will continue to set as they cool, resulting in perfectly chewy centers.

Add the Finishing Touches

A drizzle of melted chocolate, chopped pistachios, extra toasted kataifi, and a sprinkle of flaky sea salt make these cookies look and taste bakery-worthy. These toppings add texture, visual appeal, and extra layers of flavor.

Enjoy Them Fresh

These cookies are at their absolute best within the first 24 to 48 hours after baking. During this time, the kataifi filling remains the crispiest and provides the most authentic Dubai chocolate experience. While the cookies stay delicious for several days, the filling will gradually soften over time.
