Instructions
Prepare Cheesecake Filling
In a bowl, mix cream cheese, powdered sugar, vanilla, cornstarch, and salt until completely smooth.
Scoop into 12 small balls (about 2 teaspoons each) and place on a lined tray. Freeze for 45–60 minutes, until fully solid.
Prep Pumpkin
Spread pumpkin purée on paper towels and gently blot to remove excess moisture (about 1 tablespoon). Set aside.
Make Cookie Dough
In a large bowl, cream butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy.
Mix in pumpkin purée, egg yolk, and vanilla until combined.
Add Dry Ingredients
In a separate bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
