Shrimp Fritters 12 oz raw shrimp peeled, deveined, and finely chopped ¾ cup all-purpose flour ¼ cup cornstarch extra crispness 1 teaspoon baking powder ½ teaspoon salt ¼ teaspoon black pepper ½ teaspoon paprika ¼ teaspoon garlic powder 2 green onions finely sliced 2 tablespoons fresh cilantro or parsley chopped 1 large egg ½ cup cold sparkling water or milk Zest of 1 lime Neutral oil for frying Lime Aioli ½ cup mayonnaise 1–2 tablespoons fresh lime juice to taste 1 teaspoon lime zest 1 small garlic clove finely grated Salt to taste
Make the Lime Aioli In a small bowl, whisk together mayonnaise, lime juice, lime zest, garlic, and salt.
Cover and refrigerate while you prepare the fritters.
Make the Fritters In a large bowl, whisk flour, cornstarch, baking powder, salt, pepper, paprika, and garlic powder.
Add chopped shrimp, green onions, herbs, and lime zest. Toss to coat.
In a separate bowl, whisk egg and sparkling water.
Add wet ingredients to dry and gently stir until just combined. The batter should be thick but scoopable.
Fry Heat about ½ inch of oil in a skillet over medium-high heat (350–360°F).
Scoop heaping tablespoons of batter into the oil, gently flattening slightly.
Fry for 2–3 minutes per side, until golden brown and cooked through.
Transfer to a paper towel–lined plate.
Shrimp texture matters: Finely chop the shrimp into small pieces rather than puréeing. This gives the fritters structure while keeping them tender and prevents them from falling apart.
Dry the shrimp well: Pat the chopped shrimp completely dry before mixing into the batter to avoid excess moisture, which can cause soggy fritters.
Cold batter = crisp fritters: Using cold sparkling water or cold milk helps create a lighter, crispier exterior when frying.
Oil temperature: Keep the oil around 350–360°F . If the oil is too cool, the fritters absorb oil; too hot, and they brown before cooking through.
Don’t overcrowd the pan: Fry in batches so the oil temperature stays steady and the fritters cook evenly.
Shape consistency: Scoop evenly sized portions so all fritters finish cooking at the same time.
Serve immediately: These fritters are best enjoyed hot and crisp; they lose crunch as they sit.
Aioli balance: If the lime aioli tastes too sharp, add a pinch of salt or a small spoon of mayonnaise to soften the acidity.
