Make the Butter Chicken Heat butter or oil in a skillet over medium heat.
Add chicken, garam masala, paprika, turmeric, cumin, chili powder, and salt.
Cook until chicken is fully cooked and lightly golden, about 6–8 minutes. Remove and set aside.
Make the Sauce In the same pan, melt butter over medium heat.
Add garlic and ginger; sauté for 30 seconds until fragrant.
Stir in tomato puree and simmer for 5–7 minutes.
Add heavy cream and sugar (if using). Simmer until thick and smooth.
Return chicken to the sauce and stir to coat evenly. Remove from heat.
Assemble the Pizza Preheat oven to 475°F (245°C).
Roll or stretch pizza dough onto a pizza pan or stone.
Spread ½ cup butter chicken sauce evenly over the dough.
Sprinkle with mozzarella cheese.
Top with butter chicken pieces and optional red onion.
Bake Bake for 12–15 minutes, until the crust is golden and the cheese is bubbly.
Remove from oven and garnish with fresh cilantro and a drizzle of cream if desired.
Mild by default: Butter chicken is traditionally mild; add chili powder, chili oil, or crushed red pepper if you prefer more heat.
Sauce consistency: The butter chicken sauce should be thick enough to spread—simmer a little longer if it’s too thin.
Cheese balance: Mozzarella keeps the flavors balanced; avoid overly sharp cheeses that may overpower the sauce.
Crust options: Naan, flatbread, or store-bought pizza dough all work well depending on how quick you want dinner.
Make ahead: The butter chicken can be prepared up to 2 days in advance and refrigerated until ready to assemble.
Serving tip: Finish with fresh cilantro or a light cream drizzle after baking for extra flavor and presentation.
