This Mango BBQ Bacon Burger is a bold, sweet-and-smoky twist on a classic burger. Juicy beef patties are layered with crispy bacon and melty cheese, then finished with a rich mango BBQ sauce that adds a tropical pop without overpowering the savory flavors. Served on a toasted brioche bun, it’s an easy yet elevated burger perfect for summer grilling, casual dinners, or when you want something fun and flavor-packed.
Cook the bacon in a skillet until crispy. Transfer to a paper towel–lined plate and set aside.
Form the ground beef into patties and season both sides with salt and pepper.
Cook the burger patties on a grill or skillet over medium-high heat for 3–4 minutes per side, or until cooked to your desired doneness.
During the last minute of cooking, place cheese slices on the patties and cover to melt.
Lightly butter the brioche buns and toast until golden.
Spread mango BBQ sauce on the bottom bun, add the cheeseburger patty, top with bacon and sliced red onion, then add more sauce if desired. Finish with the top bun and serve immediately.
Notes
Use ripe, sweet mango for the best flavor; frozen mango works well once thawed and blended.
A smoky or honey-style BBQ sauce pairs best with the mango for a balanced sweet-savory taste.
Do not overmix the beef—gently forming the patties keeps the burgers juicy.
Toasting the brioche buns helps prevent them from getting soggy from the sauce.
The mango BBQ sauce can be made up to 3 days ahead and stored in the refrigerator.
For extra heat, add pickled jalapeños or increase the chili flakes in the sauce.
This burger pairs well with sweet potato fries, coleslaw, or grilled corn.
