Equipment

  • Mixing bowls
  • Hand mixer or stand mixer
  • Baking sheet
  • Parchment paper
  • Cookie scoop (optional)
  • Spoon or thumb (for indenting)
  • Cooling rack

Ingredients

Cookies

  • 1 cup 226g unsalted butter, softened
  • 2/3 cup 135g granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 1/4 cups 280g all-purpose flour (spooned & leveled)
  • 1 tsp cornstarch
  • 1/3 tsp salt

Cheesecake Filling

  • 6 oz 170g full-fat cream cheese, fully softened
  • 1/4 cup 50g granulated sugar
  • 1/2 tsp vanilla extract
  • 1 1/2 tsp cornstarch
  • Pinch of salt
  • Optional: 1/2 tsp lemon zest

Raspberry

  • 1/3 cup thick raspberry jam or preserves

Instructions

Cream the butter and sugar

  • In a large bowl, beat the softened butter and granulated sugar for 2–3 minutes until light and fluffy. Mix in the egg yolk and vanilla extract until smooth.

Make the dough

  • Add the flour, cornstarch, and salt. Mix just until combined. The dough should be soft, smooth, and not sticky.

Chill the dough

  • Cover and refrigerate for 30 minutes to prevent spreading.

Prepare the cheesecake filling

  • In a separate bowl, beat the cream cheese, sugar, vanilla extract, cornstarch, and salt until completely smooth. Chill for 10–15 minutes.

Preheat and prepare

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Shape the cookies

  • Roll dough into 18–20g balls (about 1 tablespoon each). Place 2 inches apart on the baking sheet. Press a deep indent into each cookie, leaving about a 1/4-inch base.

Fill the centers

  • Add about 1 teaspoon of cheesecake filling into each indent. Top with 1/4–1/2 teaspoon raspberry jam.

Bake

  • Bake for 13–15 minutes, until centers are set and matte, the filling no longer jiggles, and edges are lightly golden.

Cool

  • Let cookies cool on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. The filling will finish setting as they cool.

Notes

🍓 Flavor & texture balance

These raspberry cheesecake thumbprint cookies combine a buttery, soft cookie base with a smooth cheesecake filling and a bright raspberry center. The flavors are balanced so the cookies are sweet but not overpowering, with a slight tang from the cream cheese and a fruity pop from the jam.

⚖️ Accurate measuring for best results

For consistent results, measure flour using the spoon-and-level method or a kitchen scale. Too much flour can make the cookies dense and dry, while too little can cause spreading and loss of shape.

❄️ Why chilling the dough matters

Chilling the dough for at least 30 minutes helps the cookies hold their shape and maintain deep thumbprint centers. Skipping this step can lead to spreading and shallow wells.

🧀 Smooth cheesecake filling tips

Use full-fat block cream cheese that is fully softened for a silky texture. Mix just until smooth and creamy and avoid whipping too much air into the filling. The added cornstarch helps the cheesecake center set properly without curdling.

🍇 Choosing the right raspberry jam

Use a thick raspberry jam or preserves for best results. Runny jam can spread too much during baking and affect the structure. The amount used is balanced to provide a noticeable raspberry flavor without overpowering the cookie and cheesecake layers.

⚠️ Avoid overfilling

Do not overfill the centers. Too much filling or jam can cause overflow and uneven baking. Keeping the ratios controlled helps create clean thumbprint cookies with defined centers.

🔥 Baking and doneness tips

Bake until the centers are set and matte and the edges are lightly golden. If the centers puff slightly, gently press them down while the cookies are still warm to maintain the thumbprint shape.

🧊 Cooling and storage

Allow the cookies to cool completely so the cheesecake filling can fully set. Store in the refrigerator for up to 5 days. These cookies can also be frozen for up to 2 months for longer storage.
