Equipment

  • 12-cup muffin pan
  • Paper muffin liners
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Rubber spatula
  • Measuring cups and spoons
  • Baking sheet (for toasting the walnuts)
  • wire cooling rack
  • Toothpick (for testing doneness)

Ingredients

  • 3 large very ripe bananas mashed
  • ⅓ cup unsalted butter melted and cooled
  • ½ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • ⅓ cup sour cream
  • 1⅞ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon fine salt
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 cup toasted walnuts chopped
  • 2 tablespoons coarse sugar optional

Instructions

  • Preheat the oven to 425°F. Line a standard 12-cup muffin pan with paper liners.
  • Spread the walnuts on a small baking sheet and toast for 5 to 7 minutes until fragrant. Allow them to cool, then roughly chop.
  • In a large mixing bowl, mash the bananas until mostly smooth with a few small lumps remaining.
  • Whisk in the melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and sour cream until fully combined.
  • In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  • Add the dry ingredients to the wet ingredients and gently fold together until almost combined.
  • Fold in the toasted walnuts just until evenly distributed. Be careful not to overmix.
  • Divide the batter evenly among the muffin cups, filling each about ¾ to ⅞ full. Sprinkle the tops with coarse sugar if desired.
  • Bake for 5 minutes at 425°F. Without opening the oven door, reduce the temperature to 350°F and continue baking for 13 to 17 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

These Banana Walnut Muffins are easy to make, but a few simple tips will help ensure they turn out moist, fluffy, and full of flavor every time.

Use Very Ripe Bananas

The best bananas for banana muffins are heavily speckled or mostly brown. Overripe bananas are naturally sweeter and softer, creating a richer banana flavor and a more tender muffin.

Toast the Walnuts

Toasting the walnuts before adding them to the batter brings out their natural oils and enhances their flavor. This extra step adds a deeper nutty taste and a better texture to the finished muffins.

Measure Flour Properly

Too much flour is one of the most common causes of dry muffins. Spoon the flour into your measuring cup and level it off with a knife instead of scooping directly from the bag.

Don't Overmix the Batter

Once the dry ingredients are added, mix only until combined. Overmixing can develop too much gluten, resulting in dense or tough muffins instead of a soft, bakery-style crumb.

Fill the Muffin Cups Generously

For tall muffin tops, fill each muffin cup about ¾ to ⅞ full. The combination of a fuller muffin cup and the initial high baking temperature helps create a beautiful bakery-style rise.

Check for Doneness Carefully

Insert a toothpick into the center of a muffin near the end of the baking time. A few moist crumbs are perfect. Overbaking can dry out the muffins and reduce their soft texture.

Make Them Your Own

This banana walnut muffin recipe is easy to customize. Try adding mini chocolate chips, shredded coconut, chopped pecans, or a cinnamon-sugar topping for a fun variation.

Cool Completely Before Storing

Allow the muffins to cool completely before placing them in an airtight container. This helps prevent excess moisture from building up and keeps the muffin tops from becoming sticky.

Freeze for Later

These muffins freeze beautifully. Store them in a freezer-safe container or bag for up to 3 months. Thaw at room temperature or warm briefly in the microwave before serving.
