Ingredients

Caramel Filling

  • 1 cup granulated sugar
  • 2 tablespoons corn syrup
  • 1/2 cup sweetened condensed milk warmed
  • 1/4 cup unsalted butter cubed, room temperature
  • 3 tablespoons calamansi juice
  • 1 teaspoon calamansi zest
  • 1/2 teaspoon salt or 3/4 teaspoon for salted version

Chocolate Shell

  • 2 cups dark chocolate 60–70% cocoa, chopped or chips

Instructions

Warm the Condensed Milk

  • Gently warm the sweetened condensed milk until just warm to the touch (not hot). Set aside.

Make the Caramel

  • In a heavy-bottom saucepan over medium heat, combine sugar and corn syrup. Cook without stirring until melted and deep amber, swirling occasionally.

Add Condensed Milk

  • Slowly pour in the warmed condensed milk while stirring constantly. The mixture will bubble vigorously.
  • Reduce heat to medium-low.

Add Butter

  • Add butter a few pieces at a time, stirring continuously until smooth.

Cook to Temperature

  • Continue cooking, stirring constantly, until the caramel reaches 242–244°F.
  • Without a thermometer: cook until the caramel thickens and falls in a slow, thick ribbon from the spatula.
  • Remove from heat.

Prepare Calamansi Mixture

  • In a small bowl, mix together the calamansi juice, calamansi zest, and salt.

Add Calamansi Flavor

  • Let bubbling subside (about 2–3 minutes).
  • Gradually pour in the calamansi mixture while whisking continuously until fully smooth and emulsified.

Cool Before Filling

  • Let the caramel cool until warm and slightly thickened but still pourable.

Prepare Chocolate Shells

  • Melt chocolate in 20–30 second intervals, stirring until smooth.
  • Spoon chocolate into molds and coat sides evenly. Tap molds gently to release air bubbles.
  • Invert molds to remove excess chocolate for evenly thick shells. Chill until set. Repeat for a thicker shell if desired.

Fill the Chocolates

  • Spoon caramel into shells, leaving a small gap at the top.

Seal

  • Cover with melted chocolate and smooth the tops.

Set and Unmold

  • Refrigerate until fully set, then remove chocolates from molds.
