Maple Bourbon Sauce

  • ¼ cup bourbon
  • ½ cup ketchup
  • 2 tbsp molasses or extra maple syrup if you prefer
  • 2 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • ½ tsp chili flakes optional
  • ½ tsp black pepper
  • 1 tsp salt or to taste

  • 4-6 slices cooked chopped bacon
  • 1 tsp apple cider vinegar for balance
  • 1 tsp liquid smoke for extra smokiness

Instructions

Sauté the aromatics

  • Preheat oven to 350°F (175°C).
  • In a large oven-safe pot or deep skillet, melt butter over medium heat.
  • Add onions and cook until golden and caramelized (7–10 minutes).
  • Add garlic and cook 30 seconds until fragrant.

Make the sauce

  • Reduce heat to low.
  • Add maple syrup, bourbon, ketchup, molasses, brown sugar, Worcestershire, Dijon mustard, smoked paprika, chili flakes, pepper, and salt.
  • Stir well. Simmer for 2–3 minutes to let the alcohol cook off and flavors meld.

Add beans + bake

  • Stir in the drained beans and optional bacon.
  • Taste and adjust sweetness, salt, or spice.
  • Cover with foil or a lid and bake for 45–55 minutes, stirring halfway.
  • For thicker, stickier beans, uncover for the last 10 minutes.

Notes

  • Use pure maple syrup (not pancake syrup) for the richest flavor. Grade A dark maple syrup gives the deepest caramel notes.
  • The alcohol cooks off, leaving behind a warm, slightly smoky complexity. If you want a stronger bourbon aroma, add 1–2 teaspoons after baking.
  • Caramelizing the onions deeply before adding the sauce enhances sweetness and gives the beans a more layered flavor.
  • For thicker, stickier beans, uncover the pot during the last 10–15 minutes of baking.
  • Bacon is optional but highly recommended for smokiness and extra richness. For a vegetarian version, add smoked paprika or a splash of liquid smoke instead.
  • Beans will thicken as they cool, so don’t worry if the mixture looks slightly loose coming out of the oven.
  • Adjust sweetness to taste:
