Ingredients

Creamy Base

  • 1 cup heavy cream
  • ¾ cup sweetened condensed milk
  • 1 tsp vanilla extract

Soda Layers

  • choose clear or lightly colored sodas for best pastel effect
  • ¾ cup strawberry soda
  • ¾ cup orange soda
  • ¾ cup lemon-lime soda
  • ¾ cup blue cream soda or berry soda

Optional (for extra color control)

  • Gel food coloring pink, peach, yellow, blue

Instructions

1️⃣ Make the Cream Base

  • In a bowl, whisk together heavy cream, sweetened condensed milk, and vanilla until smooth.
  • Divide evenly into 4 small bowls.

2️⃣ Flavor the Cream Layers

  • Add 2–3 tablespoons of a different soda to each bowl:
  • Bowl 1: Strawberry soda
  • Bowl 2: Orange soda
  • Bowl 3: Lemon-lime soda
  • Bowl 4: Blue cream/berry soda
  • Stir gently (don’t overmix or you’ll lose fizz).
  • Tint lightly with gel coloring if needed.

3️⃣ Layer the Popsicles

  • Pour the first layer into popsicle molds (about ¼ full).
  • Freeze 30–40 minutes, until just set.
  • Repeat with remaining layers, freezing between each.

4️⃣ Insert Sticks & Final Freeze

  • After the final layer, insert sticks and freeze 4–6 hours until solid.

5️⃣ Unmold & Enjoy

  • Run molds briefly under warm water to release.

Notes

  • Use clear or lightly colored sodas for the cleanest pastel layers; dark sodas will muddy the colors.
  • Chill sodas before mixing to help preserve carbonation and prevent foam.
  • Stir gently when adding soda to the cream base—overmixing flattens the fizz and can thin the texture.
  • Freeze each layer until just set, not fully frozen (about 30–40 minutes) so the layers bond smoothly.
  • If layers start to bleed, let the mold freeze a little longer before adding the next color.
  • Silicone popsicle molds release best and keep layers crisp and defined.
  • Run molds under warm (not hot) water for a few seconds to unmold cleanly.
  • Popsicles will keep well in the freezer for up to 2 weeks when wrapped or stored in an airtight container.
  • For a lighter version, swap heavy cream for half-and-half or whole milk (texture will be slightly icier).
